Food is Fuel - Kale and potato warm salad

I love to create and explore and that includes in the kitchen too. Life can get busy and taking the time to cook a homemade meal can sometimes fall by the wayside. I get it. However, there is something to be said about cooking and how it connects us to what we put in our bodies. You don't have to be great chef or culinary specialist to enjoy the art of cooking. It's up to you to find what you enjoy in the kitchen and, whatever that is, make it yours. Play around with recipes, invite others to cook with you, try new techniques or simply just enjoy the art of making something. 

Our Food is Fuel series is based on our love of making and exploring. We hope that you enjoy our recipes, learning more about food and are inspired to get cooking yourself. 

Food is Fuel - Kale and Potato warm salad (inspired by our weekly local Marketbox and recipe from The Solitary Cook)

Ingredients (add or reduce as you feel fit):

  • Potatoes (we used Russian Banana potatoes) 1lb
  • Kale (Luciano or whatever kale variety speaks to your tastebuds) 1 bunch
  • Olive oil
  • Salt/Pepper
  • Lemon juice
  • Any other spice, flavor or addition that you feel will make you smile (we added some garlic and a little extra pepper)

Make it 

  • Cut your potatoes into smallish cubes (wash and clean them before if needed) and add to a pot of salted water. Bring to boil and let 'em cook!
  • Clean and prep your kale (de-stem and keep all the parts you want to devour). Chop into bite size pieces or whatever size you prefer. 
  • When the potatoes are almost done (when a fork can easily push into them) add the kale to the pot.
  • Cook to your desired liking with the kale (couple minutes or more depending on how you like it) and then drain through a colander.
  • Let cool just a minute then add to a large bowl. Add your olive oil, lemon juice, salt, pepper and any other flavors or additions that you desire. Mix thoroughly and enjoy immediately.
